Just hit the red Record button below the Editor windows in the workspace of Audition, the New Audio File dialog pops up where you can choose a different file name, sample rate, channels and bit depth. You will see the waveform in the Editor window when you speak. You can pause the recording anytime in the recording process by clicking the Pause button. Press on the same button again to resume your recording. When you are finished, click the Stop button to complete the audio recording in Audition.

Play the recording in Audition and optionally edit the sound recording. When you are satisfied with the recording, go to export it from File menu > Save.
